Meals I’ve Made for Postpartum

A couple of weeks ago, with my due date approaching it set in that I would soon be in the thick of postpartum life. With my first I didn’t really meal prep at all. I had somewhat of a plan but I didn’t really prep anything ahead of time except some breakfast items. This time, the weeks leading up to my delivery I really tried to get a few meals, snacks and breakfasts prepped ahead of time. While I didn’t get to everything on my list because he came early, these are few of the items I made that we loved!

Breakfast Burritos

One item we often forget to prep ahead of time for postpartum is breakfast. I am a big breakfast person so this was important for me to make something ahead of time! I came across these breakfast burritos by Brunch with Babs. They were easy to make and tasted very good! I made them ahead of time, stuck them in the freezer and they were ready to go for breakfast the week that I gave birth!

Crockpot Creamy Chicken Salsa

Who doesn’t love an easy, filling meal? This crockpot recipe was so easy that I actually made it the week that I gave birth. It was so easy and all you have to do is add cream cheese, salsa and chicken to a crockpot. That’s it. You set it on low for 8 hours or high for 4 hours. We used ours in taco rollups and quesadillas. You could also use it on top of tortilla chips for nachos. Seriously the easiest recipe! It tasted great too!

Granola Bars

I don’t know about your family, but we have continually gone through granola bars lately. We kept spending so much money on granola bars. I decided to see if I could find a good recipe online. This recipe was very easy to make and it tastes wonderful. I smush the granola bar mixture down somewhat thin and then I freeze it! It becomes an easy snack or breakfast to grab.

Crockpot Chicken Pot Pie

Three words: Easy, savory and tasty! This recipe was an easy crock pot meal that we all loved. A few notes: Instead of the yukon potatoes I bought some small purple and red potatoes. I also planned to use plain greek yogurt as a sub for cream of chicken. I do think it would have been a little bit more creamy if I had used the cream of chicken.

Cheesy Italian Sausage Orzo:

I found this recipe on tik tok. It is so easy, filling and tastes great! We made this, froze it and had leftovers for about a week! Below is the recipe. Or you can watch the recipe being made here.

1. Cook Italian sausage

2. Mix in tomato sauce, heavy cream, water, and Italian seasoning

3. Stir in orzo, bring to a boil, then simmer for 20 mins

4. Top it off with Parmesan cheese
